Potassium citrate is a white transparent crystal or white granular powder, odorless, taste salty, cool feeling, the relative density is 1.98. Moisture absorption in the air easily deliquescence. Soluble in glycerin, almost insoluble in ethanol.
In food processing industry, it is used as buffer, chelating agent, stabilizer, antibiotic oxidizer, emulsifier, flavor. Used in dairy product,jellies, jam, meat, tinned,pastry. Used as emulsifier in cheese and used in citrus freshening. In pharmaceutical industry, it is used for curing hypokalimia, potassium depletion and alkalization of urine.
